Required Ingredients to Hyderabadi Mutton :

  • Mutton (with bones), 500 grams
  • Curd 1/2 cup
  • Onion (finely chopped and fried): 2 large
  • Tomatoes 2 (made into puree)
  • Ginger-garlic paste: 2 tablespoons
  • Green chillies 2 (chopped)
  • Turmeric powder, 1/2 teaspoon
  • Red chili powder 1 tsp
  • Coriander powder 1 tsp
  • Garam masala 1/2 tsp
  • Coriander leaves 2 tbsp (for garnish)
  • Mint leaves, 1 tbsp
  • Lemon juice 1 tsp
  • Salt to taste.
  • Oil or ghee: 4 tbsp
  • Water as required (for gravy)

Method of preparation to Hyderabadi Mutton :

Take mutton in a bowl, add curd, ginger-garlic paste, turmeric, red chili powder, and salt, and mix well. Marinate it in the fridge for at least 1-2 hours or overnight. Heat oil in a pan and fry chopped onions in it till golden. Now add tomato puree and remaining ginger-garlic paste and fry till oil separates. Add coriander powder, garam masala, green chilies, and some mint leaves. Now add marinated mutton and fry on high flame for 5-7 minutes. Then cover and cook on low flame for 40-45 minutes (or 4-5 whistles in a pressure cooker). Add some water if required to form a gravy. Garnish with coriander leaves, lemon juice, and some mint leaves. Serve hot Hyderabadi Mutton Curry with roti, paratha, or basmati rice. A little khoya or cream can be added to add more depth to the flavor. You can also make this mutton curry in dum style—cooking on low flame enhances the flavor.
