Ingredients for making raw mango chutney :

Raw mango (grated) 1 cup
Mint leaves 1/2 cup
Green coriander 1/2 cup
Green chilli 2
Ginger 1 small piece
Cumin (roasted) 1/2 teaspoon
Black salt 1/2 teaspoon
Common salt according to taste
Sugar or jaggery 1-2 teaspoons (optional – according to taste)
Lemon juice 1 Teaspoon

 

Method of making raw mango chutney :

Peel raw mango and grate it. Wash and chop mint, coriander, green chillies and ginger. Put grated mango, mint, coriander, green chillies and ginger in a mixer jar. Add roasted cumin seeds, black salt, white salt, sugar/jaggery and lemon juice. Add some water and make a fine paste. Fill the prepared chutney in an airtight container. You can store it in the fridge for 3-4 days. This chutney tastes great with dal-rice, puri, parathas, pakodas and snacks. If you like it spicy, add more green chillies. If you want sweetness, you can also add dates instead of jaggery.
