Ingredients to make matar pulao :
- Basmati rice, 1 cup (soaked)
- Green peas, 1 cup
- Ghee or oil, 2 tbsp
- Bay leaf 1
- Cloves 2–3
- Black pepper (whole) 4–5
- Cinnamon stick, 1 inch
- Cumin seeds, 1 tsp
- Green chili (chopped) 1
- Ginger (grated) 1 tsp
- Water: 2 cups
- Salt to taste.
- Coriander leaves for garnish
Method of making matar pulao :
Wash basmati rice and soak it for 15–20 minutes. Heat ghee/oil in a cooker or pan. Add cumin seeds, bay leaves, cinnamon, cloves, and black pepper. Add ginger and green chili and fry for 30 seconds. Now add green peas and stir for 1 minute. Then add soaked rice and fry for 1 minute on low flame. Add 2 cups of water and salt to taste. Cover and cook in the cooker till 1 whistle (or cover with the lid on and cook on low flame for 10-12 minutes). Turn off the gas.
Open the lid after some time. Garnish with green coriander. Serve the matar pulao hot with raita, curd, papad, or pickle. For more flavor, you can add mint or lemon juice to the pulao. Frying cashews or onions and adding them on top will give a rich touch.
