Ingredients required for thandi Kheer :
- Full-cream milk—1 liter
- Rice—1/4 cup
- Sugar—1/2up
- Cardamom powder—1/2 teaspoon
- Almonds—5-6finely chopped)
- Cashews—5-6 (cut into pieces)
- Pistachios—5-6 (for garnishing)
- Saffron—a few strands (optional)
- Rose water—1/2 tsp (optional)
Method of preparation thandi Kheer :
Boil milk in a heavy-bottomed pan and cook on low flame for 10 minutes.Strain the soaked rice and add it to the milk, and keep cooking on low flame. Keep stirring in between so that the rice does not stick to the bottom.When the rice is cooked well and the milk thickens a little,
add sugar. Add cardamom powder, chopped dry fruits, and saffron.Turn off the gas and let the kheer come to room temperature. Then cool it in the fridge for 2-3 hours. Garnish the chilled kheer with pistachios and a few drops of rose water and serve. To make the kheer thicker and richer, you can add a little khoya (mawa). To control the sweetness, condensed milk can also be used in place of sugar.
