Ingredients to make biryani rice :

  • Basmati Rice—1—1cup soaked for 30 minutes
  • Bay leaf – 1Big cardamom—1
  • Green cardamom – 2
  • Cinnamon—1—1 piece
  • Cloves—4
  • Whole black pepper—6
  • Cumin seeds—1
  • tspOnion – 1 thinly sliced
  • )Green chili—1 chopped
  • Ginger-garlic paste—1 tsp
  • Salt—as per taste
  • Desi ghee/oil—2 tbsp
  • Water—1.75 cups
  • Coriander and mint—for garnish

Method of Preparation biryani rice  :

Heat ghee in a cooker or a thick-bottomed pan. Add whole spices (bay leaf, cardamom, cinnamon, cloves, black pepper, and cumin seeds) and fry. Now add onion and fry till it turns golden. Then Add ginger-garlic paste and green chilies, strain the rice soaked for a few seconds, and fry it gently for 1-2 minutes. Now add water and salt. Cover and let the rice cook on medium flame (1 whistle in the cooker or 12-15 minutes on low flame without the cooker).

After the rice is cooked, add green coriander and mint on top. Cover and keep on simmer for 5 minutes. You can serve biryani rice with raita, chili pickle, or paneer/chicken gravy.
