ingredients for making Hakka noodles :
Hakka noodles—200 grams (boiled)
Capsicum—1 (cut into thin slices)
Cabbage—1 cup (chopped)
Carrot—1 (cut long)
Green chili—1-2 (finely chopped)
Spring onion—1/2 cup (green part and white part separately)
Soy sauce—1 tablespoon
Red chili sauce—1 tbsp
Vinegar—1 tsp
Black pepper powder—1/4 tsp
Salt—according to taste
Oil—2 tbsp (for frying on high flame)
Ajinomoto (optional)—a pinch
Method of Making Hakka Noodles :
Boil water in a deep vessel. Add some salt and oil, then add noodles. Boil for 5-6 minutes, then wash with cold water and keep aside. Heat a wok or pan on high flame. Add oil and first add the white part of the spring onion and green chilies. After this, add carrots, capsicum, and cabbage and stir on high flame for 2-3 minutes. Now add boiled noodles. Then add soy sauce, chili sauce, vinegar, black pepper, and salt. Mix and stir well for 2-3 minutes so that the noodles do not break. Sprinkle green spring onion on top. Serve hot. It can be eaten alone or can be served with Manchurian or Chili Paneer.
