 Ingredients required for making Shahi Bhindi :

  • Ladyfinger—10-12 (washed, dried, and cut lengthwise)
  • Oil—for frying the ladyfinger
  • Onion—2 (finely chopped)
  • Tomato—1 (make a paste) Ingredients:
  • Ginger-garlic paste—1 tsp
  • Cashews—8-10 (soaked, make a paste)
  • Cream or fresh cream—3-4 tsp
  • Curd—2 tsp (whipped)
  • Oil or ghee—2-3 tsp (for gravy)
  • Turmeric—½ tsp
  • Coriander powder—1 tsp
  • Red chili powder—½ tsp
  • Garam masala—½ tsp
  • Salt—to taste
  • Kasuri methi—1 tsp

Recipe for making Shahi Bhindi :

Wash and dry the bhindi and cut it into big pieces. Then lightly fry in hot oil and keep aside.

Make a smooth paste with the soaked cashews.

Heat oil/ghee in a pan, add onion and ginger-garlic paste, and fry till golden brown.

Now add tomato paste and cook for 2-3 minutes.

Add turmeric, coriander powder, red chili powder, and salt.

Now add cashew paste and cook on low flame.

Add whipped curd and kasuri methi and cook till oil separates.

Now add fried bhindi, add garam masala, and cook for 5 minutes.

Finally garnish with malai or cream and serve hot.
