Ingredients for Amritsari Potato Recipe :
Boiled potatoes—4
Mustard oil—
2 tbsp Asafoetida—
1 pinch Fenugreek seeds—
1/2 tsp Fennel seeds—
1 tsp Nigella seeds—
1/2 tsp Turmeric powder
—1/2 tsp Red chili powder
—1 tsp Coriander powder—
1.5 tsp Salt—
according to taste Tamarind pulp
—2 tbsp (or 1 tbsp dry mango powder)
Jaggery—1 tbsp (grated)
ater—1/2 cup
Coriander leaves—for garnish
Method to Make Amritsari Potato Recipe :
Heat mustard oil in a pan. Add asafoetida, fenugreek seeds, fennel, and nigella seeds and fry lightly.
Now add turmeric, coriander powder, red chili powder, and salt. Fry the spices lightly.
Add chopped boiled potatoes and mix well with the spices. Fry for 2-3 minutes. Now add tamarind pulp and jaggery to it. Add some water and cook on low flame for 5-7 minutes, till the launji thickens. Garnish with coriander leaves and serve hot launji with puri, paratha, or lachcha paratha.
Use either dry mango powder or tamarind powder. The amount of jaggery can be increased or decreased according to taste. Launji can be made a day before and eaten—it tastes even better.
