Ingredients for making lemon pickle Lemon :
- —1 kg (wash and dry)
- Salt—100 grams
- Turmeric powder—
- 1 tablespoon Red chili powder
- —2 tablespoons
- Fennel—2 tablespoons
- Fenugreek seeds—1
- tablespoon Black salt—1
- tablespoon Asafoetida—1/2
- teaspoon Mustard oil—1 cup
- Jaggery—250 grams (grated)
Method of making lemon pickle :
Wash the lemons well and wipe them with a cloth. Then cut them into 4 pieces. Put them in a glass vessel, and add salt and turmeric. Keep it in the sun for 8-10 days and keep stirring it daily.
Lightly roast fennel and fenugreek and grind them coarsely. Add black salt, asafoetida, and red chili powder to it.
After 10 days, when the lemons become soft, add the mixture of spices to it. If you want to make sweet and sour pickle, then add jaggery to it.
Heat mustard oil and add it to the pickle when it cools down. Mix well and fill it in a clean glass jar. Keep the pickle in the sun for 5-7 days. Then it is ready to eat.
Always use a dry vessel and clean spoon to make pickles. To store pickle for a long time, keep adding mustard oil from time to time. Add spices only when the lemon becomes completely soft.
