Ingredients for Sindhi Kadhi :

Gram flour—1/2

cup Oil—2-3

tablespoons Fenugreek seeds—1

teaspoon Asafoetida—1 pinch

Curry leaves—10-12

Green chilies—2

Tomatoes—2 (grated or pureed)

Tamarind pulp—2

tablespoons Turmeric powder—1/2

teaspoon Red chili powder

1/2 teaspoon spoon

Salt—according to taste

Water—4-5 cups

Vegetables—ladyfinger, carrot, potato, brinjal, and arbi

Method of making Sindhi Kadhi :

Heat oil in a pan. Add fenugreek seeds, asafoetida, and curry leaves. Then add gram flour and fry till golden and fragrant. Add turmeric, red chili powder, and salt to the roasted gram flour. Now add water slowly and mix well so that there are no lumps.

Now add grated tomatoes and tamarind pulp to it. Cook on medium flame for 10-12 minutes. Now add all the boiled vegetables and let it cook on low flame for 15-20 minutes so that the spices get absorbed well in the vegetables. Serve Sindhi Kadhi with hot boiled rice, pickle, and papad.
