Lauki Dahi Curry Required Ingredients :

Lauki (Ghiya) 1 cup (grated)
Curd 1 cup (whipped)
Gram flour, 1 tablespoon
Ginger-garlic paste: 1 teaspoon
Green chili 1 (finely chopped)
Turmeric powder, 1/2 teaspoon
Red chili powder, 1/2 tsp
Cumin seeds, 1/2 tsp
Mustard seeds, 1/4 tsp.
Curry leaves (optional): 5-6 leaves
Salt to taste.
Oil 2 tbsp
Coriander leaves 1 tbsp (for garnish)
Method of making Lauki Dahi Curry :
Heat some water in a pan and add grated bottle gourd to it. Add a little salt and cover the bottle gourd and cook for 5-6 minutes. After cooking, strain the bottle gourd and keep it aside. Put curd and gram flour in a bowl and whisk well so that there are no lumps. Add some water to it and dilute it. Heat oil in a pan. Add cumin seeds, mustard seeds, and curry leaves to it. Then add ginger-garlic paste and green chilies. Fry lightly. Now add turmeric and red chili powder. Fry the spices a little. Now add the beaten curd-gram flour mixture to the tempering slowly and keep stirring continuously so that the curd does not curdle. Cook on low flame for 5-7 minutes. Now add the cooked gourd and mix well. Add salt as per taste and cook for 3-4 minutes more. Turn off the gas and garnish with green coriander. Serve it with hot rice or roti.
