Ingredients to make Poha cutlet:
- Poha (Chivda): 1 cup (take thick poha)
- Boiled potatoes, 2 medium size
- Green chillies, 1-2 finely chopped
- Coriander leaves, 2 tbsp finely chopped
- Ginger paste 1 tsp
- Salt to taste.
- Garam masala 1/2 tsp
- Chaat masala/amchur 1/2 tsp
- Red chili powder 1/2 tsp
- Bread crumbs, 1/2 cup (for coating)
- Cornflour/maida 2 tbsp (for binding)
- Oil for frying
Method of preparation of Poha cutlet:
Take poha in a sieve and wash it in running water, and let it swell for 5-7 minutes. The poha should be neither too wet nor too dry—just slightly soft. In a bowl, add soaked poha, mashed potatoes, green chillies, coriander, ginger, spices, and salt. Mix everything well. If you want, you can add grated carrot, capsicum, or peas to it.
Make small tikkis or oval-shaped cutlets from the mixture. Wrap it in bread crumbs to get a crispy texture. Press lightly so that the breadcrumbs stick well. Apply some oil to a non-stick pan and fry the cutlets on both sides till they become golden brown. If you want, you can also deep-fry or air-fry them.
Serve hot Poha cutlets with mint chutney, tomato sauce, or coriander chutney. If the poha becomes too wet, add some bread crumbs or semolina. If you want, you can also make stuffed Poha cutlets by adding cheese cubes.
