Ingredients of Making Semolina Idli :

  • Semolina (Rava) 1 cup
  • Curd 1 cup (whipped)
  • Eno/Fruit Salt 1 tsp (or baking soda—1/2 tsp)
  • Salt to taste.
  • Water as required
  • Oil 1 tsp (for frying/molding)
  • Green chili (optional): 1 (finely chopped)
  • Grated Carrot/Capsicum 2-3 tbsp (optional)
  • Oil 1 tsp
  • Mustard seeds (Rai) 1/2 tsp
  • Curry leaves: 6-7 leaves
  • Green chili, 1 finely chopped

Method to make Semolina idli:

Mix semolina and curd in a bowl. Whisk well. Add water as required and make a smooth batter. (If the curd is thick, a little water is required.) Cover and keep aside for 10-15 minutes so that the semolina swells. Heat some oil in a pan. Add mustard seeds, curry leaves, and green chilies and mix in the batter.

If you want, you can also add finely chopped carrots, capsicum, and coriander to the batter. Add Eno or baking soda to the batter. Add a little lemon juice so that it foams. Mix quickly and immediately pour the batter into the idli mold. Heat water in an idli steamer or a large vessel.

Grease the mold and pour the batter in it. Cover and steam for 10-12 minutes. Check by inserting a toothpick—if it comes out clean, the idli is ready. Serve hot idlis with coconut chutney, tomato chutney, or sambhar.
