Ingredients for making Dum Biryani :
- Basmati rice—2 cups (30 minutes soaked)
- Bay leaf – 1
- Cinnamon stick—1 piece
- Green cardamom – 2
- Cloves – 3-4
- Salt—according to taste
- Chicken—500 gms (or paneer/sabzi option)
- Curd—1 cup
- Ginger-garlic paste—1 tbsp
- Red chili powder—1 tsp
- Turmeric – 1/2 tsp
- Garam masala—1 tsp
- Lemon juice—1 tbsp
- Salt—according to taste
- Coriander leaves + mint—1 cup
- Ghee or oil—3-4 tbsp
- Finely chopped onions—2 (fried—birista)
- Saffron—8-10 strands (soaked in hot milk)
- Fried onions—for garnishing
- Mint/coriander—for garnishing
How to make Dum Biryani :
Water Boil, add whole spices and salt. Add soaked rice and cook till 70-80%. Strain and keep aside. Marinate chicken (or mutton/paneer) in the above spices and curd for 1 hour. Add some ghee in a thick-bottomed pan. Put a layer of marinated meat/vegetable. Put some fried onion, mint-coriander, and saffron milk on it.
Then put a layer of rice on top. Add layers in the same way and put ghee, birista, coriander leaves, and saffron on top. Seal the lid with dough (or put a tight lid). Cook on dum for 20-25 minutes on low flame. Serve hot dum biryani with raita, salad, and chili pickle.
