Ingredients for making butter chicken :
- Boneless chicken—500 grams
- Curd—1/2 cup
- Ginger-garlic paste—1 tablespoon
- Red chili powder—1 teaspoon
- Turmeric—1/2 teaspoon
- Salt—according to taste
- Lemon juice of lemon—1 tbsp
- Tomatoes—4 (chopped)
- Cashews—10-12
- Ginger—1 inch
- Garlic—5-6 cloves
- Butter—3 tbsp
- Cream—1/2 cup
- Kasuri methi—1 tsp
- Garam masala—1/2 tsp
- Honey or sugar—1 tsp (for flavor balance)
- Salt—as per taste
Method of making butter chicken :
In a bowl, mix chicken, curd, lemon juice, ginger-garlic paste, turmeric, salt, and chili. Marinate in the fridge for 1 hour (it will taste even better if kept overnight). Heat some butter in a pan. Fry the marinated chicken till it is light brown and cooked. Keep aside. Boil tomatoes, cashews, ginger, and garlic together, cool, and grind. Now heat butter in a pan, add this paste to it, and cook on medium flame. Cook for 10 minutes. Add salt, red chili, garam masala, honey, and kasuri methi.
Now add the cooked chicken to the gravy and cook on a low flame for 5-7 minutes. Add cream, mix lightly, and let it cook for 2 minutes. Serve hot butter chicken with butter naan, tandoori roti, or basmati rice. If you want to give a smoky flavor, burn a piece of coal and place it in a bowl, add ghee, and cover. You can use cream and a little milk instead of cashews, but cashews give better taste and thickness.
