Ingredients required for Shimla Sabzi :

  • 250 grams of capsicum
  • 2 to 3 onions
  • 2 tomatoes
  • 1 teaspoon cumin seeds
  • 1-inch piece of ginger
  • Green chilies
  • 4 to 5 cloves of garlic
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin powder
  • Half teaspoon black pepper powder
  • 1 teaspoon garam masala
  • Salt according to taste.
  • Finely chopped coriander leaves
  • Half a cup of mustard oil

Method of making Shimla Sabzi :

Chop the capsicum and onion into thin pieces; if you want to add lettuce, chop that too. Heat oil in a pan. Add onion and fry till it turns light golden. Now add turmeric, coriander powder, and red chili powder, and stir for 30 seconds. Add chopped capsicum and mix well. Now add salt and cover and cook on medium flame for 7-8 minutes. Finally, add garam masala and fry for 1 minute.

Garnish with green coriander and serve hot. This vegetable tastes delicious with roti, paratha, or dal-rice. It can also be kept in the lunchbox—it does not leak. If you want, you can also add boiled potatoes or paneer to it. You can also add dry fenugreek or dry mango powder for more taste.
