Ingredients for making cashew curry:

Cashews: 25-30 pieces

Onion, 2 medium (finely chopped)

Tomatoes, 3 medium

Ginger-garlic paste, 1 tablespoon

Green chili 1 (finely chopped)

Cashew paste 2 tablespoons (or soak 8-10 cashews and grind them)

Cream 2 tbsp

Oil or ghee, 2 tbsp

Cumin seeds, 1/2 tsp

Turmeric 1/4 tsp

Coriander powder 1 tsp

Red chili powder 1/2 tsp

Garam masala 1/2 tsp

Salt to taste.

Kasuri methi 1/2 tsp (crushed)

Green coriander for garnishing

Method to make cashew curry:

Heat some ghee or oil in a pan. Fry the cashews till they turn light golden. Take it out separately. In the same pan, add cumin seeds, then add onion and fry till golden. Now add ginger-garlic paste and green chilies; fry for 1-2 minutes. Add tomato puree and spices (turmeric, chili, coriander powder, and salt). When the masala starts leaving oil, then add cashew paste and cream. Add 1/2 cup water and cook the gravy for 4-5 minutes. Then add roasted cashews and cook on low flame for 3-4 minutes. Finally add garam masala, kasuri methi, and green coriander, and turn off the gas. Serve cashew curry hot with naan, butter roti, tandoori roti, or cumin rice.
