Heat water in a deep vessel. Add some salt and oil to it. Now add pasta and boil for 8–10 minutes (soft but not mushy). After boiling, strain and wash with cold water. Heat butter in a pan. Add flour to it and fry on medium flame till it becomes light golden. Now add milk slowly and keep stirring continuously so that lumps do not form. When the sauce starts thickening, add salt, black pepper, herbs, chili flakes, and cheese. Mix well. Stir and cook for 2 minutes.

Put some oil in a pan and sauté all the vegetables for 2-3 minutes. Add boiled pasta and roasted vegetables (if any) to the white sauce. Mix well so that the sauce coats the pasta. Cook for 2 more minutes and then turn off the gas. Sprinkle some cheese or herbs on top. Serve hot with garlic bread or garlic toast. Stir continuously while adding milk; otherwise, lumps might form in the sauce. This pasta is also a hit recipe for kids’ tiffin. You can make it even without vegetables, just with cheese and sauce.
