Ingredients to prepare crispy bitter gourd :
Bitter gourd—4 (cut into thin slices)
Salt—according to taste
Turmeric—1/4 tsp
Red chili powder—1/2 tsp
Coriander powder—1 tsp
Chat masala—1 tsp (optional)
Gram flour—2 tbsp
Rice flour—1 tablespoon
Oil—for frying
Lemon juice—1 teaspoon (optional)
Method to make crispy bitter gourd :
Apply salt to the chopped bitter gourd and keep it for 20 minutes. Then squeeze it well and remove the water. Add turmeric, chili powder, coriander powder, chaat masala, gram flour, and rice flour to the bitter gourd. Mix everything well so that every slice gets coated. Heat oil in a pan. Deep-fry the bitter gourd slices on medium flame till they become crispy. Remove it on tissue paper so that the extra oil drains out. Serve hot, crispy bitter gourd with dal-rice, paratha, or roti. Sprinkle some lemon juice on top and double the taste. You can add a little cornflour for more crispiness. It can also be made crispy in less oil in an air fryer.
