Don’t Waste Rice! Try This Crispy Cutlet Recipe with Tamarind Dip

Leftover Rice Recipe: Do you sometimes have leftover rice at home? It happens often. And then you wonder what to do with it. Most people fry the leftover rice and eat it, which is fine, but if you want to try something new and interesting, then why not make very tasty rice cutlets from it?

These rice cutlets are perfect for breakfast or for a light evening hunger. Easy to make and delicious to eat! So let’s know how to make these delightful rice cutlets:

What you need to make rice cutlets:

One cup of  leftover cold rice

Two boiled potatoes

Half a cup of roasted gram flour

One finely chopped onion

Two teaspoons grated carrots

Two teaspoons finely chopped beans (Farsi)

One finely chopped green chilli (you can add more or less according to your taste)

One teaspoon turmeric powder

One teaspoon of cumin powder
One teaspoon red chilli powder
One teaspoon coriander powder

Salt to taste

Some green coriander, finely chopped

Oil, for frying

How to make these delicious rice cutlets:

First of all, take out the leftover rice in a large vessel.

Now peel the boiled potatoes and grate them well.

Put the grated potatoes and rice in the vessel and mix them well.

Now add finely chopped onion, grated carrots, finely chopped beans and finely chopped green chillies. Mix all these well with rice and potatoes.

Take a separate pan and add gram flour to it and fry it on a low flame till it becomes light golden. Keep stirring continuously so that the gram flour does not burn. Roasted gram flour will give binding to the cutlet and will also enhance the taste.

Put the roasted gram flour in the rice and potato mixture.

Now add all the spices – turmeric powder, cumin powder, red chili powder, coriander powder and salt. If you like a little spice, then you can also add some chaat masala and dry mango powder to it.

Finally, add finely chopped coriander and mix everything well.

When all the things are mixed well, take this mixture little by little in your hand and make tikki or in the shape of your choice.

Now heat oil in a pan. The oil should be hot on a medium flame.

When the oil is hot, add cutlets one by one and deep fry them until golden brown. If you want, you can also shallow fry them in a pan in less oil.

When the cutlets are cooked well on both sides and turn golden, remove them from the oil and place them on a tissue paper so the extra oil can drain.

That’s it, your hot and delicious rice cutlets are ready! You can serve them with your favorite chutney or sauce. Children will also like them a lot!
