- Oil 2-3 tbsp
- Mustard seeds (rai) 1/2 tsp
- Turmeric powder 1/2 tsp
- Red chili powder 1 tsp
- Coriander powder 1 tbsp
- Cumin powder 1/2 tsp
- Fennel powder 1/2 tsp
- Dry mango powder, 1/2 tsp spoon
- Salt according to taste.
Method of making stuffed parwal :
Wash and peel the parwal. Cut the middle part with a knife, but do not cut it completely. Remove the seeds and keep them aside. Prepare the masala by mixing turmeric, red chili, coriander powder, cumin powder, fennel powder, dry mango powder, and salt in a bowl. If you want, you can also add 1 spoon of gram flour. Fill the prepared masala in the slit made with a knife in each parwal. Press it well with your fingers so that the masala does not come out. Heat oil in a pan, add mustard seeds, and let it crackle. Now put all the parwals in the pan and cook covered on low flame. Keep turning it in between so that it becomes golden from all sides. Stuffed parwal is ready. Serve it with hot roti, paratha, or dal-rice. Get a new taste by adding some kasuri methi to the masala. If you want it more spicy, you can add green chili paste. Adding gram flour binds the masala well, and the vegetable remains dry.
