Ingredients to make egg rolls :

Maida/wheat flour—1 cup

Salt—according to taste

Oil—1 tablespoon

Water—as needed (for kneading dough)

Eggs—2 (large size)

Onion—1 (thinly chopped)

Tomato—1 (thinly sliced, optional)

Capsicum—1 (thinly sliced)

Green chili—1 (finely chopped)

Lemon juice—1 tsp

Black pepper—1/4 tsp

Salt—according to taste

Chaat masala – 1/2 tsp

Tomato sauce/mustard sauce—according to taste

Coriander leaves—for garnishing

Oil—for frying the egg and roasting the paratha

Method of making egg rolls:

Add salt and oil to the flour and knead it, and keep it covered for 15 minutes. Take a dough ball and roll it, apply some oil on both sides of the pan, and roast it till it becomes golden brown. Break eggs in a bowl, add salt and black pepper to it, and beat it. Put some oil on the pan, pour the egg, and place the prepared paratha on it so that the egg sticks to the paratha. Roast it till it turns light golden on both sides. Remove the egg-coated paratha from the pan. Take it out. Add onion, capsicum, tomato, green chili, chaat masala, lemon juice, and green coriander to it. If you want, you can also spread sauce. Now fold it like a roll and wrap it in paper or foil. Serve the egg roll hot with green chutney, tomato ketchup, or masala tea.
