Required Ingredients make mixed vegetables :
- Carrot, 1/2 cup (chopped)
- Cauliflower, 1/2 cup (cut into florets)
- Beans, 1/4 cup (chopped)
- Peas, 1/4 cup (frozen or fresh)
- Capsicum 1/2 cup (chopped)
- Onion 1 (finely chopped)
- Tomato 2 (make puree) (take)
- Ginger-garlic paste 1 tsp
- Turmeric powder 1/2 tsp
- Coriander powder 1 tsp
- Red chili powder 1/2 tsp
- Garam masala 1/2 tsp
- Kasuri methi 1/2 tsp (crushed)
- Salt to taste.
- Oil or ghee, 2 tbsp
Method of make mixed vegetables :
Lightly boil or steam carrots, cauliflower, beans, and peas. Make sure that the vegetables are not too soft. Heat oil in a pan. Add onion and fry till golden brown. Then add ginger-garlic paste and cook for 1 minute. Now add tomato puree. Add turmeric, coriander powder, red chili powder, and salt to it. Let the masala cook for 5-7 minutes till it leaves oil. Now add boiled vegetables and capsicum. Mix well. Add some water if needed. Reduce the flame. Add kasuri methi and garam masala. Cook for 3-4 minutes more. Serve the mixed veg with hot roti, paratha, or jeera rice. It is perfect for both lunch and dinner. Do not overcook the vegetables; a little crunchy taste is good. You can make it even richer by adding paneer or tofu. You can make it restaurant-style by adding butter.
