Ingredients to make banana kofta : 

  • Raw banana—3 (boiled and mashed)
  • Boiled potato—1 medium
  • Rock salt—according to taste (if making for fasting)
  • Green chili—1 (finely chopped)
  • Green coriander—1 tablespoon
  • Ginger—1/2 teaspoon (grated) (done)
  • Red chili powder—1/2 tsp
  • Garam masala—1/2 tsp
  • Arrowroot/singhara flour—1-2 tbsp (for binding)
  • Oil—for frying
  • Tomatoes—2 (make a puree)
  • Green chili—1
  • Ginger—1 tsp (grated)
  • Cumin seeds—1/2 tsp
  • Turmeric—1/4 tsp
  • Coriander powder—1 tsp
  • Red chili powder—1/2 tsp
  • Garam masala—1/2 tsp
  • Rock salt—as per taste
  • Oil—1 tbsp
  • Water—1 cup
  • Coriander leaves—for garnishing

Method of  making banana kofta :

Mash boiled banana and potato well. Add green chili, ginger, coriander, spices, and flour to it. Make small balls. Make and fry in oil till golden brown. Drain on a paper towel. Heat oil in a pan and add cumin seeds, ginger, and green chilies. Now add tomato puree and add spices (turmeric, coriander, chili, and salt). Fry on low flame for 5-7 minutes. Add water and let it boil. When the gravy is ready, add koftas and cook for 2-3 minutes.

Sprinkle garam masala and green coriander. Serve banana kofta with hot rajgira roti, puri, or normal roti/paratha. If the kofta is breaking, add some more flour. Curd can also be added to the gravy for extra taste. If you are not fasting, you can also use normal salt and onion-garlic.
