Ingredients to make chole masala :
Oil or ghee, 2 tablespoons
Cumin seeds, 1/2 teaspoon
Bay leaf 1
Onion (finely chopped): 2 medium
Tomatoes (finely chopped): 2 medium
Ginger-garlic paste 1 tbsp
Green chillies (finely chopped): 1-2
Coriander powder 1 tsp
Red chili powder 1/2 tsp
Turmeric powder 1/4 tsp
Garam masala 1/2 tsp
Chana masala (optional): 1 tsp
Salt to taste.

Method to make chole masala :
Cook the chickpeas in a pressure cooker for 4-5 whistles with a tea leaves bundle and salt. Remove the bundle. Heat oil in a pan, and add cumin seeds and bay leaves. Add onions and fry till they turn golden brown. Now add ginger-garlic paste and green chilies and fry.
Add chopped tomatoes and spices (coriander powder, red chili, and turmeric) and cook till oil starts separating. Now add boiled chickpeas and mash the chickpeas a little so that the gravy becomes thick. Cook on low flame for 5–10 minutes. Add garam masala and chana masala, garnish with green coriander, and serve.
