Recipe for making water chestnut flour kadhi:

Ingredients:

3/4 cup curd

1 1/2 grams water chestnut flour

1/4 tsp rock salt

1/4 tsp red chili powder

1/4 tsp cinnamon powder

1 1/3 cups water

2 tbsp coriander leaves, finely chopped

1 1/2 tsp ghee

1/3 tsp cumin seeds

1 dried red chili

5 curry leaves

Method of making:

Add curd, water chestnut flour, rock salt, red chili powder, and cinnamon powder to a medium-sized mixing bowl.

Mix all the ingredients well.

Add water and mix again, so no lumps are left in the mixture.

Pour this mixture into a saucepan and boil on a low flame.

Keep stirring continuously, so that the curry does not stick to the bottom of the pan.

For the tempering, heat ghee in a flat-bottom fry pan.

Once the ghee is hot, add cumin seeds.

Add dried red chilies and curry leaves when the cumin seeds start crackling.

Stir well and fry for a minute.

Immediately add this tempering to the boiling curd mixture and mix well.

Simmer the mixture for 5-6 minutes or till the curry thickens.

Serve hot, garnished with chopped coriander.
