Ingredients to make Jira Rice :
Basmati rice, 1 cup (soaked for 30 minutes)
Water: 2 cups
Ghee or oil: 1.5 tbsp
Cumin seeds 1.5 tsp
Bay leaf 1
Cinnamon stick, 1 inch
Cloves 2-3
Green chili (sliced) 1 (optional)
Salt to taste.
Method of preparation Jira Rice :
Wash the rice well and soak it in water for 30 minutes. Then strain and keep aside. Heat a pan or wok, and add ghee or oil to it. Add cumin seeds and fry till light brown. Then add bay leaves, cinnamon, cloves, and green chilies and fry for 10 seconds. Now add soaked rice and fry gently for 1 minute. Add 2 cups of water and salt. Let it boil once. Then reduce the flame, cover, and cook for 10–12 minutes. Turn off the gas and keep it covered for 5 minutes. Then fluff it gently and serve hot with dal tadka, chole, or gravy. Use ghee for more flavor. Do not stir the rice too much; otherwise, it may break. Garnishing with green coriander enhances both color and taste.
