Milk, 1 liter full cream
Rice, 1/4 cup
Sugar 1/2 cup
Cardamom powder 1/2 teaspoon
Saffron 6-8 threads
Dry fruits 2-3 tablespoons
Rose water
Method to make kheer :
Soak the rice in water for 30 minutes. Drain the water and keep it aside. Boil the milk in a heavy-bottomed pan on medium flame. When the milk starts boiling, reduce the heat and add rice to it. Cook the milk and rice for 30-35 minutes by stirring continuously until the rice melts completely and the milk thickens. Keep stirring in between so that the milk does not burn from the bottom. Now add sugar to it and cook until the sugar dissolves. Then add cardamom powder, saffron milk, and chopped dry fruits. Cook for 5 more minutes. Turn off the gas and let the kheer cool down to room temperature. After this, keep it in the fridge for at least 2 hours. Garnish the cold kheer with a few drops of rose water and serve. If you want, add more dried fruits on top. You can also use condensed milk to enhance the taste of the kheer. If you like a thicker kheer, take a little more rice. Do not cook the kheer too much after adding sugar; otherwise, the milk may curdle. This kheer is very much liked as a cold dessert in the summer season. It can be served during fasts, festivals, or any special occasion.
