Gram flour, 2 tablespoons

Rice flour (optional): 1 tablespoon

Turmeric powder, 1/4 teaspoon

Red chili powder, 1/2 teaspoon

Coriander powder 1 teaspoon spoon

Garam Masala 1/2 tsp

Amchur Powder 1/2 tsp

Salt to taste.

Oil (for frying), as required

Method of Preparation Crispy Bhindi :

Wash the ladyfinger thoroughly, cut it from both ends, and cut it lengthwise into thin pieces. Then spread it on a cloth and let it dry for 15 minutes so that the moisture is removed. Take the chopped ladyfinger in a large bowl. Add gram flour, rice flour, turmeric, red chili, coriander powder, garam masala, dry mango powder, and salt to it. Mix well so that the masala coats each piece. If needed, you can sprinkle 1-2 tsp of water. Heat oil in a pan and fry the ladyfinger in batches on medium flame till it becomes crispy. When it becomes golden brown and crispy, remove it and keep it on tissue paper. Your crispy ladyfinger is ready. Serve it with hot dal rice, roti, or paratha. If you want a healthier version, bake the bhindi in an air fryer or oven at 200°C for 10–12 minutes. Adding rice flour to the bhindi makes it even crispier. Fry it immediately after adding the spices, or else the bhindi may release water.
