Required Ingredients for Handi Chicken :

  • Chicken (boneless), 500 grams
  • Curd 1 cup (beaten)
  • Onion 2 (finely chopped or fried)
  • Tomatoes 2 (make a paste)
  • Ginger-garlic paste, 1 tablespoon
  • Green chili 2 (chopped) (hui)
  • Cashew paste or cream 2 tbsp
  • Oil or ghee, 3-4 tbsp
  • Salt to taste.
  • Coriander leaves for garnishing
  • Turmeric powder—1/2 tsp
  • Coriander powder—1 tsp
  • Red chili powder—1 tsp
  • Garam masala—1/2 tsp
  • Kasuri methi—1 tsp
  • Cinnamon, bay leaves, cardamom—1-2 (for tempering)

Method of preparation to Handi Chicken :

Mix chicken with curd, salt, turmeric, red chili, and ginger-garlic paste and keep it for 1 hour. Heat the clay pot slowly on low flame. Add oil or ghee to it. Add whole spices (bay leaves, cinnamon, cardamom). Now add onion and fry till it becomes golden brown. Then add ginger-garlic paste and tomato paste. When the masala starts leaving oil, add cashew paste or cream. Add marinated chicken and fry on medium flame for 8-10 minutes. Now add some water and cover the handi and cook on low flame for 25-30 minutes. Finally, add garam masala and kasuri methi. Sprinkle green coriander and keep on dum for 5 minutes. Serve the handi chicken hot with naan, rumali roti, or jeera rice. Using a clay handi gives a desi touch to the taste, but if not, a thick-bottomed pan will also work. Do not forget to season the handi (soak in water before use). To make it even creamier, you can add some butter or fresh cream at the end.
