Semolina (Rava) 1 cup

Curd 1/2 cup

Water, 1/4 cup (as per requirement)

Finely chopped vegetables (carrot, capsicum, cabbage, etc.) 1 cup

Green coriander, 2 tablespoons

Green chili (finely chopped) 1 (optional)

Salt to taste as per

Mustard seeds, 1/2 tsp

Curry leaves: 5-6 leaves

Oil 1 tbsp (for tempering)

Baking soda 1/4 tsp

Method of making semolina balls :

Mix semolina, curd, salt, finely chopped vegetables, coriander leaves, and some water in a bowl and make a thick batter. Keep it covered for 10-15 minutes. Heat oil in a small pan, add mustard seeds and curry leaves, prepare tempering, and mix it in the batter. Add baking soda to the batter and mix well. Make small balls from the batter and steam them in an idli stand or steamer for 10-12 minutes. Serve hot semolina balls with coconut chutney or coriander-mint chutney. You can also air fry them. If you want, you can make these balls crispy by shallow frying them a little. These balls are very much liked in children’s tiffin.
