How to Make Tasty; Spicy, Eggplant Brinjal Masala at Home

Ingredients to Make Brinjal Masala

Brinjal (long or round) – 4-5 medium-sized cut into thin slices

Onion—2 (finely chopped)

Tomato—2 (make puree)

Ginger-garlic paste—1 tablespoon

Green chili—1-2 (finely chopped)

Turmeric powder—1/2 teaspoon

Red chili powder—1 teaspoon

Coriander powder—1.5 tsp

Garam Masala—1/2 tsp

Amchur Powder—1/2 tsp (to taste)

Salt—to taste

Oil—3-4 tbsp

Coriander Leaves—for garnish

Method of Making Brinjal Masala :

Soak the chopped brinjals in water with some turmeric and salt for 10 minutes to remove the bitterness.

Heat oil in a pan and fry the brinjal slices till golden brown. Remove and keep on paper towel.

Add some oil in the same pan. Add onion and fry till golden brown. Then add ginger-garlic paste and green chilies and fry.

Add tomato puree and add turmeric, coriander powder, red chili powder, and salt, and cook on medium flame till the masala leaves oil.

Now add the fried brinjals to the masala and mix gently so that the brinjals do not break. Cover and cook for 5-7 minutes.

Add dried mango powder and garam masala and mix. Sprinkle green coriander on top.

Serve Baingan Masala with hot roti, paratha, or jeera rice.
