Ingredients for making Dal Bati :
- Toor Dal (Arhar Dal) 1/4 cup
- Moong Dal 1/4 cup
- Chana Dal 1/4 cup
- Masoor Dal 1/4 cup
- Urad Dal 1/4 cup
- Tomatoes (chopped) 1
- Green chili 1-2 (finely chopped)
- Ginger-garlic paste 1 tsp
- Turmeric powder 1/2 tsp
- Red chili powder 1/2 tsp
- Salt to taste.
- Coriander leaves 2 tbsp
- Ghee 2 tbsp
- Mustard or cumin seeds, 1/2 tsp.
- Asafoetida: 1 pinch
- Whole red chili 1-2
- Curry leaves: 5-6 leaves
- For Bati :
- Wheat flour: 2 cups
- Semolina 1/4 cup
- Ghee 3 tbsp
- Salt to taste.
- Baking powder 1/2 tsp
- Celery (optional): 1/2 tsp
- Water for kneading
- Ghee (for dipping), plenty of quantity
Method of making Dal Bati :
Wash all the dals and cook in a pressure cooker with turmeric, salt, ginger-garlic paste, and tomatoes till 3-4 whistles. After cooking, after that, mix the dal well (do not make it too thin). Now heat ghee in a pan, temper it with mustard/cumin, asafoetida, curry leaves, and red chillies. Pour the tempering in the dal and add green coriander on top. Mix flour, semolina, salt, baking powder, celery, and ghee in a vessel.
Knead a hard dough by adding water little by little. Make round balls from the dough and make a slight crack in the middle. Bake the batis in the oven at 180°C for 25-30 minutes or bake them on a tandoor/griddle on low flame. After baking, dip the hot batis in pure ghee. Serve the ghee-dipped bati with hot dal. If you serve garlic chutney, onion, and churma with it, the taste increases further.
