Ingredients required to make Chicken Malai:
- Boneless chicken piece, 500 grams
- Curd 1/2 cup
- Fresh cream, 1/2 cup
- Ginger-garlic paste, 1 tablespoon
- Green chili paste 1-2 (according to taste)
- Black pepper powder 1 teaspoon
- Lemon juice, 1 tablespoon
- Cashew paste, 2 tablespoons
- Salt to taste.
- Oil or ghee, 2 tablespoons
- Kasuri methi 1/2 teaspoon (roasted)
- Green coriander (for garnish) a little
Method to make Chicken Malai:
Wash and clean the chicken thoroughly. Mix curd, ginger-garlic paste, green chili paste, lemon juice, cashew paste, black pepper powder, salt, and cream in a bowl. Add chicken to it and mix well. Let it marinate in the fridge for at least 1 hour (or overnight). Heat oil or ghee in a wok or non-stick pan. Add the marinated chicken and cook covered on medium flame.
When the chicken starts cooking and the masala starts leaving oil, add kasuri methi and mix gently. Now add the remaining fresh cream and cook on low flame for 3-4 minutes. Add chopped coriander leaves on top. Serve hot chicken malai with butter naan, roti, pulao, or jeera rice.
Cashew paste gives a smooth and rich taste to the chicken; do not skip it. If you want, you can also add some milk or mawa to give it a royal touch. Boneless chicken cooks quickly; take care not to overcook it.
