Today, 10th July, all Indians are celebrating Guru Purnima, a special day which falls every year on the full moon of the Hindu month Ashadha. It is the day we celebrate our teachers and gurus but did you know that it is also meant to be an auspicious day to please Goddess Lakshmi?
The majority of homes continue the age-old custom of presenting Goddess Lakshmi with kheer during the day. It is said that if this dish is offered to Goddess Lakshmi, the house will be prosperous and invites wealth. If you’d also like to commemorate the day with devotion, do go ahead and prepare this easy and yummy sweet at home.
Ingredients to Make Kesariya Kheer
1 liter full cream milk
1 cup rice
1 cup sugar
10 chopped almonds
10 pistachios
1 tablespoon raisins
12–15 saffron strands
1 teaspoon cardamom powder
Easy Steps to Prepare Kesariya Kheer
1. Rinse the rice and then soak in water for 1 hour.
2. Saffron threads soak in 2 tablespoons lukewarm milk and set aside.
3. Boil 1 liter milk in deep pan over low heat, stirring occasionally, till thick.
4. Drain the rice and mix with sugar and milk. Boil for 20 minutes until the rice is tender.
5. Mix cardamom powder and saffron milk. Simmer further for 5 minutes.
6. Fry all dry fruits- raisins, almonds, cashews, and pistachios in ghee in another pan.
7. Now mix fried dry fruits in kheer.
And that’s all! Your kesariya kheer, soft and scented, is ready. You can have it hot from the vessel, or refrigerate it, either way it’s simply delectable.
