Ingredients to make Pani Puri :
- Semolina (Rava) 1 cup
- Maida 1 tablespoon
- Baking soda: 1 pinch
- Salt according to taste.
- Water as required (for kneading)
- Oil for frying For serving
- Mint leaves, 1 cup
- Coriander leaves, 1/2 cup
- Green chilies 2-3
- Ginger 1/2-inch piece
- Tamarind pulp 2 tbsp
- Roasted cumin powder, 1 tsp.
- Black salt 1/2 tsp
- White salt to taste
- Water: 4-5 cups
- Lemon juice 1 tbsp (optional)

- Boiled potatoes, 2 medium (crushed)
- Boiled chickpeas or peas, 1/2 cup
- Black salt to taste
- Roasted cumin powder 1/2 tsp
- Red chili powder 1/2 tsp
Method to make Pani Puri:
Mix semolina, flour, baking soda, and salt and knead a stiff dough. Keep covered for 15-20 minutes. Take small balls of dough and roll them into thin puris. Fry the Pani Puri in hot oil on medium flame till they puff up and become crispy. Store in an airtight container when cooled.
Grind mint, coriander, green chilies, ginger, and tamarind by adding some water. Put this paste in a big vessel, and add the remaining water, spices, and lemon juice to it. Cool it in the fridge. Mix boiled potatoes and chickpeas and add spices to it. Mix well. Break the puris lightly in the middle. Fill with potato-chickpea stuffing. Pour spicy mint water on top. Eat immediately and enjoy!
Roll the dough hard and thin to make the puri crispy. To make the water more spicy or sour, you can increase the amount of tamarind or lemon. If you want, you can also make sweet water by mixing tamarind, jaggery, and roasted cumin seeds.
