Ingredients required for Mutton Nali :
Mutton Nali (with bone)—500 grams
Onion—3 (finely chopped)
Tomato—2 (finely chopped)
Curd—1/2 cup (whipped)
Ginger-garlic paste—2 tablespoons
Red chili powder—1.5 teaspoons
Turmeric powder—1/2 tsp
Coriander powder—1 tsp
Garam masala—1 tsp
Whole spices—2 bay leaves,
4 cloves, 4 black peppercorns,
2 small cardamom pods,
and 1 cinnamon stick
Coriander leaves—for garnishing
Oil or desi ghee—4 tbsp
Salt—according to taste
Water—as required
Method of making Mutton Nali :
Heat oil in a pan, and add whole spices to it. Add onion and fry till it turns golden. Add ginger-garlic paste, then add turmeric, red chili, and coriander powder, and fry the masala well. Add chopped tomatoes and cook till the masala leaves oil. Add whipped curd and continue frying on low flame. Add mutton pieces (including the drain) and mix well with the masala. Fry on high flame for 5-7 minutes. Add water as required. Cover and cook on low flame for 40-45 minutes (or 3-4 whistles in a pressure cooker).
Add garam masala and cook for 5 more minutes. Garnish with coriander leaves and serve hot with naan or rice. The marrow (pulp) removed from the bone gives a special taste to this dish. Scoop it with a spoon before eating. You can make it richer by adding some cream or butter if you want.
