Required Ingredients Besan Dhokla:

  1. Gram flour (chickpea flour): 1 cup
  2. Semolina (rava, optional): 1 tablespoon
  3. Curd 1/2 cup
  4. Water 1/2 cup or as required
  5. Lemon juice, 1 tablespoon
  6. Ginger-green chili paste, 1 teaspoon
  7. Turmeric powder, 1/4 teaspoon
  8. Salt according to taste.
  9. Eno fruit salt, 1 teaspoon (or 1/2 teaspoon baking soda)
  10. Oil (for greasing) a little
  11. For tempering ingredients
  12. Quantity
  13. Oil 1 tbsp
  14. Mustard seeds 1 tsp
  15. Curry leaves: 8-10 leaves
  16. Green chillies (chopped): 2-3
  17. Sesame seeds (optional): 1 tsp
  18. Sugar + water + lemon Mix 1 tsp lemon juice and 1 tsp sugar in 1/2 cup water

Method of making Besan Dhokla:

In a bowl, add gram flour, semolina, curd, turmeric, salt, ginger-green chili paste, and some water, and prepare a thick batter. Keep it covered for 10-15 minutes.Beat the batter again and add Eno fruit salt at the end and mix well immediately. The batter will start to swell. Pour the batter into a greased plate or dhokla mold and cook in a preheated steamer on medium flame for 15-20 minutes. Check by inserting a knife; if it comes out clean, then the dhokla is ready. Heat oil in a pan. Add mustard seeds, curry leaves, green chilies, and sesame seeds. Mix sugar-lemon-water in the prepared tempering and pour it over the dhokla. Cut the dhokla after it cools down and serve with green chutney or tamarind chutney. It is very important to beat the batter to make the dhokla soft and spongy. Steam it immediately after adding Eno. Dhokla can also be made with baking soda, but Eno gives better results.
