Ingredients for making jackfruit pickle:
- Jackfruit—500 grams (cut into small pieces)
- Mustard oil—250 ml
- Fennel—2 tbsp
- Fenugreek seeds—1 tbsp
- Mustard seeds—1 tbsp
- Turmeric powder—1 tbsp
- Red chili powder—1.5 tbsp
- Salt—as per taste
- Asafoetida—1/2 tsp
- Vinegar—2 tbsp
- Lemon juice—2 tbsp
Method to Make Jackfruit Pickle:
Add a little salt to the chopped jackfruit pieces and boil in a cooker for 1 whistle. Drain the water and let it dry completely. Lightly fry fennel, fenugreek seeds, and mustard in a pan and grind coarsely. Now add turmeric, red chili powder, salt, and asafoetida to the ground masala. Heat mustard oil well till it smokes. Mix it in the spices when it cools down.
Now add boiled and dried jackfruit to the spices. Mix well and leave it covered for 1 day. The next day, add vinegar or lemon juice and mix well. Fill in sterilized glass jars. Pickle will be ready after 3-4 days. Always take out the pickle with a clean and dry spoon. If kept in the sun for 2-3 days, the taste will improve even more. No need to store it in the fridge, but keep it in a cool place
