Ingredients required to make Lauki gourd kofta:
- Gourd (ghiya/dudhi) – 2 cups (grated)
- Gram flour—4 tbsp
- Green chili—1 (finely chopped)
- Salt—according to taste
- Turmeric—¼ tsp
- Red chili powder—½ tsp
- Coriander leaves—finely chopped
- Oil—for kofta For frying
- Onion—2 (paste)
- Tomato—2 (puree)
- Ginger-garlic paste—1 tsp
- Turmeric—¼ tsp
- Coriander powder—1 tsp
- Garam masala—½ tsp
- Cream or Malai—2 tbsp (optional)
- Salt—according to taste
- Oil—2 tbsp
Method of making Lauki Kofta:
Squeeze out excess water from grated lauki (do not throw away water; it can be used in gravy). Add gram flour, green chilies, salt, turmeric, red chilies, and green coriander to it. Take a little mixture and make round balls of kofta. Fry the koftas on low flame in hot oil till they turn golden.
Heat oil in a pan, add onion paste, and fry. Now add ginger-garlic paste and fry till it smells good. Then add tomato puree and spices (turmeric, coriander powder, salt). When the gravy thickens, add some water (or bottle gourd water) to it. Now add cream and garam masala and cook well. Add koftas to the gravy and cook on low flame for 2-3 minutes.
Serve hot bottle gourd koftas with roti, paratha, naan, or jeera rice. Garnish with green coriander and some cream.
