You all know the properties of curd; in the summer season, curd should be consumed in plenty. In such a situation, if cold gourd and curd are mixed, then it gives double benefit. Ingredients for Lauki Raita:

Curd 2 cups (whipped)

Bottle gourd (ghiya) 1 cup (grated)

Green chili 1 finely chopped

black salt 1/2 small spoon

Roasted cumin powder 1/2 tsp

Salt to taste.

Coriander leaves 1 tbsp (chopped)

Method of making Lauki Raita :

Add some water in a pan and boil the grated bottle gourd in it for 5-6 minutes till it becomes slightly soft. Strain the cooked bottle gourd and cool it. Beat the curd well in a large bowl so that there are no lumps in it. Now add boiled bottle gourd to the beaten curd. Add green chillies, black salt, salt, and roasted cumin powder to it. Garnish with green coriander and serve chilled. Bottle gourd raita tastes great with puri, paratha, pulao, or dal-rice. Serve it with lunch—it helps in keeping the stomach cool. You can also add mint powder or fresh mint to it. The curd should not be too sour, otherwise the taste may get spoiled. Keep the raita in the fridge for some time before serving.
