In today’s recipe, we have brought for you a recipe for mixed khichdi, which is full of nutrition and quick to prepare. To make this mixed khichdi, send the vegetables, lentils, and rice present in your house, and with this mixture we will prepare a mixed khichdi, which is prepared very quickly and easily. So let’s quickly know what ingredients we will need to make mixed khichdi.
Required Ingredients make mixed khichdi :
- Rice, 1/2 cup
- Moong dal (or mixed pulses) 1/2 cup
- Onion 1 (finely chopped)
- Tomato 1 (finely chopped)
- Carrot, 1/2 cup (chopped)
- Peas 1/4 cup
- Potato 1 (small, chopped)
- Ginger-garlic paste 1 tsp
- Turmeric powder 1/2 small spoon
- Red chili powder 1/2 tsp
- Salt to taste.
- Ghee or oil 1 tbsp
- Cumin seeds, 1/2 tsp
- Water 3 cups (or as needed).
- Coriander leaves 1 tbsp
Method of making mixed khichdi :
Wash rice and lentils thoroughly and soak them for 20 minutes. Heat ghee/oil in a cooker, and add cumin seeds. Now add onion and fry till light brown. Then add ginger-garlic paste and fry for 1 minute. Now add chopped tomatoes, carrots, potatoes, and peas. Add turmeric, chili powder, and salt to it. Fry for 2-3 minutes. Now add soaked lentils and rice to the cooker. Add 3 cups of water and mix well. Close the lid of the cooker and cook on medium flame till 3 whistles. Then turn off the gas and let the pressure release. Open the cooker and mix the khichdi with a spoon. Add green coriander on top and serve hot with a few drops of ghee. To make it even more nutritious, add spinach or gourd to it. You can add more water if you want creamier khichdi. Serve with curd, papad, or pickle. Serve mixed khichdi with raita, pickle, and papad for lunch or dinner. It is also healthy and will be liked by everyone from children to elders.
