Ingredients for making radish pickle :
Radish—500 grams (peeled and sliced long and thin)
Salt—2 teaspoons
Turmeric powder—1 teaspoon
Red chili powder—1 tablespoon
Mustard (thick)—2 large spoons
Fennel seeds—1 tbsp
Fenugreek seeds—1 tsp
Mustard oil—½ cup
Lemon juice—2 tbsp (optional)
Asafoetida—1 pinch
Method of making radish pickle :
Peel the radish and cut it into thin, long, or square shapes. Dry it well in the sun or on a cotton cloth for 4–5 hours so that the moisture is removed. Grind mustard, fennel, and fenugreek seeds coarsely. Put the radish in a bowl, then add turmeric, red chili, salt, and ground spices to it. Mix well. Heat mustard oil in a pan till it starts smoking. Turn off the gas and let it cool a little.
Add asafoetida to it and pour it over the pickled radish. You can also add lemon juice to it if you want. Fill the pickle in a clean and dry glass jar. Keep it in the sun for 2–3 days so that the flavor develops well. Stir once daily with a spoon. It is important to dry the radish; otherwise, the pickle can spoil quickly.
