Ingredients to Make Cashew Curry :
Cashews—1/2 cup (about 50 grams)
Onion—2 (finely chopped)
Tomatoes—2 (make puree) (take)
Ginger-garlic paste—1 tbsp
Green chili—1-2 (finely chopped)
Cream—2 tbsp (or malai)
Milk—1/2 cup
Kashmiri red chili—1 tsp
Turmeric – 1/2 tsp
Coriander powder—1 tsp
Garam masala—1/2 tsp
Cumin seeds—1/2 tsp
Salt—according to taste
Oil/ghee—2 tbsp
Coriander leaves—for garnishing
How to Make Cashew Curry :
First of all, heat some ghee or oil in a pan and fry the cashews till they turn light golden. Keep aside. In the same pan, add cumin seeds, then add onions and fry till golden brown. Now add ginger-garlic paste and green chilies and fry for 2-3 minutes. Add tomato puree and cook till oil starts separating. Now add turmeric, coriander powder, red chili powder, and salt. Mix well and then add roasted cashews. Add milk and cook for 5 minutes. Finally, add cream and cook for 2-3 more minutes. Add garam masala, sprinkle green coriander, and serve hot.
