Ingredients for making mutton korma Ingredients :
Quantity: Mutton (bone), 500 grams
Curd 1 cup beaten
Onion 3 finely chopped
Ginger-garlic paste: 2 tablespoons
Cashew/almond paste
2 tablespoons
Green chillies 2 (sliced)
Red chili powder 1 tsp
Coriander powder 1 tsp
Turmeric powder 1/2 tsp
Garam masala 1/2 tsp
Kasuri methi 1 tsp
Ghee or oil, 4 tbsp
Salt to taste.
Water as required
Method to make mutton korma:
Marinate the mutton with ginger-garlic paste, curd, salt, and a little red chili powder for at least 1 hour. Heat oil or ghee in a pan or cooker. Fry the finely chopped onion till it turns golden brown, and keep half of the onion aside (for garnish). Now add ginger-garlic paste to the onion, then add cashew/almond paste and fry well. Then add all the dry spices (turmeric, coriander, and chili powder) and fry well till oil starts leaving. Add the marinated mutton and mix it well with the spices. Cover and cook on low flame for 10-15 minutes. Now add water (according to the gravy) and cook till 3-4 whistles. Cook. Finally, add garam masala, kasuri methi, and fried onions. Cook for a few more minutes and garnish with coriander leaves. Whisk the curd and add it so that it doesn’t curdle. Malai or fresh cream can be added for more richness. Cooking korma on low flame deepens the flavor. Serve mutton korma with naan, roti, sheermal, or jeera rice.
