Ingredients for making Sev bhaji :
- Thick Sev (Nylon Sev), 1 cup
- Oil, 2 tablespoons
- Mustard seeds (rice): 1/2 teaspoon
- Asafoetida, a pinch
- Curry leaves: 5-6 leaves
- Green chillies (finely chopped): 1-2
- Onion (finely chopped): 1 medium
- Tomatoes (finely chopped): 2 medium
- Red chili powder 1/2 tsp
- Turmeric powder 1/4 tsp
- Coriander powder 1 tsp
- Garam masala 1/2 tsp
- Salt to taste.
- Water, 1.5 cups (for gravy)
- Coriander leaves (garnish): 1 tbsp
Method of making sev bhaji :
Heat oil in a pan, crackle mustard seeds, then add asafoetida, curry leaves, and green chilies. Add onion and fry till light golden. Then add chopped tomatoes and cook for 3-4 minutes. Now add turmeric, red chili, coriander powder, garam masala, and salt. Mix the spices well and cook for 2 minutes. Now add 1.5 cups of water and let it boil. Cook the gravy on low flame for 4-5 minutes. When the gravy is ready, turn off the gas and add sev to it.
Serve immediately so that the sev remains crispy. Serve sev bhaji with hot chapati, jowar/bajra. Serve with bhakri or basmati rice. Garnish with green coriander. Add Sev at thed, or else it will become wet and soft. If you want, you can also make it in Jain style by skipping the use of onion and garlic. To increase the spiciness, you can increase the amount of green chili or red chili powder.
