Shahi Korma is a vegetarian dish that you can make for a vegetarian family because it is a little mild in taste.

Ingredients for making Shahi Korma:

Mutton or Chicken—500 grams (cleaned)

Curd—1 cup (whipped)

Onion—2 large (finely chopped or fried roasted onions)

Ginger-garlic paste—1 tablespoon

Desi ghee/oil—3-4 tablespoons

Cashews—8-10 (make a paste)

Grated coconut—2 tablespoons (optional)

Poppy seeds (poppy seeds)—1 tablespoon (soak and make a paste)

Milk—1/2 cup

Cream—2 tablespoons

Green coriander—for garnishing

Bay leaf – 1

Cinnamon—1 piece

Green cardamom – 2

Cloves – 2

Turmeric – 1/2 tsp

Red chili powder—1 tsp

Coriander powder—1 tsp

Salt—according to taste

Garam masala—1/2 tsp

Saffron—few strands (soaked in hot milk)

Method of making Shahi Korma :

Grind cashews, poppy seeds, and coconut by adding some water. Heat ghee in a heavy-bottomed pan. Add bay leaves, cinnamon, cardamom, and cloves, and fry lightly. Now add onions and fry till golden. If there are fried onions, then add them later. Now add ginger-garlic paste and fry. Then add curd and cook on low flame while stirring so that the curd does not curdle. Now add red chili, turmeric, and coriander powder and fry. Add mutton/chicken and mix well with the spices. Fry the mutton for 5-10 minutes until the oil separates. Now add cashew-poppy seed paste, milk, and cream. Add salt and saffron milk as per taste. Add some water (if you want gravy), cover, and cook on low flame for 30-40 minutes (for mutton). If it is chicken, then 20-25 minutes will be enough. When the mutton becomes soft and the gravy thickens, then add garam masala and fried onions. Garnish with green coriander. Serve Shahi Korma with naan, rumali roti, tandoori roti, or jeera rice.
