Ingredients to make Shahi Paneer:
Paneer—250 grams (cut into cubes)
Tomatoes—3 (medium, chopped)
Onion—2 (finely chopped)
Ginger—1 inch piece
Garlic—5-6 cloves
Green chili—1
Cashews—10-12
Cream or fresh cream—2 tbsp
Curd—2 tbsp
Ghee or butter—2 tbsp
Oil—2 tbsp
Cumin seeds—1/2 tsp
Bay leaf – 1
Coriander powder—1 tsp
Turmeric—1/4 tsp
Red chili powder—1/2 tsp
Garam masala—1/2 tsp
Salt—as per taste
Coriander leaves—for garnishing
Method of making Shahi Paneer :
Grind tomatoes, ginger, garlic, green chili, and cashews in a mixer. Grind the onion separately and make a paste. Heat oil and ghee in a pan. Add cumin seeds and bay leaves. Now add onion paste and fry till it turns golden. Then add tomato-cashew paste. Add all the spices (turmeric, chili, coriander powder, and salt) and fry well. When the masala starts leaving oil, add curd and cream. Add some water and let the gravy cook for 5-7 minutes. Then add paneer pieces and cook on low flame for 5 minutes. Finally, add garam masala and green coriander and cover. Serve Shahi Paneer hot with Naan, Paratha, Rumali Roti, or Jeera Rice.
