Ingredients to make Shahi Paneer :
- Paneer (chopped), 200 grams
- Tomatoes, 3 medium (puree)
- Onion, 1 large (finely chopped)
- Cashews 10-12 (soaked)
- Cream/Fresh Cream 1/4 cup
- Ginger-garlic paste 1 tsp
- Ghee or oil, 2 tbsp
- Bay leaf 1
- Green cardamom 2
- Cinnamon stick, 1 small piece
- Turmeric powder 1/2 tsp
- Red chili powder 1 tsp
- Coriander powder 1 tsp
- Garam masala 1/2 tsp
- Salt to taste.
- Kasuri methi 1 tsp (crushed)
- Water as required
Method to make Shahi Paneer :
Make a smooth paste in the mixer by adding some water to the soaked cashews. Heat ghee in a pan. Add bay leaves, cardamom, and cinnamon. Then add onion and fry till golden brown. Now add ginger-garlic paste and fry till the rawness goes away. Add tomato puree, turmeric, chili powder, and coriander powder, and cook till the spices leave oil. Now add cashew paste and cook for 2-3 minutes. Add some water and make the gravy as thick as desired.
Add kasuri methi, salt, and garam masala. Add chopped paneer pieces and cook for 2-3 minutes on low flame. Add cream on top and mix. Serve hot Shahi Paneer with naan, butter roti, or cumin rice.
