- Capsicum (finely chopped)—2
- Boiled sweet corn—1 cup
- Tomatoes—2
- puree or finely chopped)
- Onion—1 (finely chopped)
- Ginger-garlic paste—1 tsp
- Green chili—1 (finely chopped)
- Turmeric powder—1/2 tsp spoon
- Coriander powder—1 tsp
- Red chili powder—1/2 tsp
- Garam masala—1/2 tsp
- Salt—according to taste
- Oil—2 tbsp
- Coriander leaves—for garnishing
How to Make Shimla Mirch Corn Sabzi :
Heat oil in a pan. Add finely chopped onion and fry till golden brown.Now add ginger-garlic paste and green chilies. Fry for 1 minute. Then add tomato puree and cook till oil leaves.Now add capsicum and boiled sweet corn. Also add turmeric, coriander powder, red chili powder, and salt.Add 2-3 tbsp water, cover, and cook for 10-12 minutes till the capsicum becomes a little soft but the crispiness remains.Now add garam masala, mix, and turn off the gas. Sprinkle green coriander on top and serve with hot paratha, roti, or puri.Boil the corn beforehand; it will save time. Do not overcook the capsicum; its mild crunch enhances the taste. You can also use it as toast or sandwich filling.
